Our no-nonsense guide to your first sourdough loaf
The recipe we hand to friends who want to start baking. No special equipment, no jargon, just the method we've used for a decade, scaled down for a home oven.
Our overnight dough method means most of the work happens while you sleep. Wake up, shape, bake, eat.

Some recipes demand your full attention. These don't. Cinnamon buns are one of those rare bakes where patience matters more than speed. By giving the dough an overnight rest, you wake up with most of the hard work already finished.
The result is soft, buttery buns with delicate layers that stay tender for days. Whether you're baking for family brunch or simply treating yourself, they're worth every minute of waiting.
Use room-temperature ingredients whenever possible. Cold butter and milk can slow fermentation and make the dough harder to work with.
Prepare your baking tray, parchment paper, and filling ingredients before you begin. A little organisation makes the process much smoother.
If your buns seem dry, they likely baked a few minutes too long. Next time, check them earlier and remove them when the tops are lightly golden.
If the dough feels sticky after the overnight rest, dust the work surface lightly with flour instead of mixing extra flour into the dough.
Remember, every batch teaches you something. Even imperfect cinnamon buns disappear quickly.
